Minka - Raw - 77% Plain
After trying all the flavor combinations from Minka Raw, it was perhaps time to taste the pure chocolate version.
It hits from the first second: the tasting opens with a refreshing punch, slightly mentholated, with hints of eucalyptus — surprising for a pure cocoa product. This profile carries across much of the experience. Quieter but present, a faint hazelnut note and a woody roundness emerge, leaning toward a light coffee bitterness if you let the piece melt slowly.
As I build experience with Ecuadorian cacao, its diversity and depth should no longer amaze me. And yet, with every new bar, they do. Minka is the one making that case, once again.
