A little treat. It’s a chocolate that disappears quickly - probably because it’s sweeter! Republica del Cacao’s milk chocolate is as fine as the dark chocolate. You get the richness of the arriba cocoa while enjoying the slightly more indulgent and less bitter side. The pieces of “Inca berry” (a cousin of the Quebec ground cherry) provide welcome bursts of acidity! A great value for those with a sweet tooth!

Republica del Cacao - Single Origin Los Rios - Hacienda la Concepcion - 85% Fine Cacao

This is a full-bodied chocolate that does not hide its power. It assumes its place as the most bitter chocolate of the Republica del Cacao brand. It’s interesting: often, arriba cocoa is known for its dark chocolates without bitterness. But here we see that it can also compete in this area. Behind this pronounced trait, we can guess a flavor of bark and coffee. A chocolate that distinguishes itself by its intensity and bitterness, for those who like this character trait.

Republica del Cacao - Single Origin Galapagos – 75% Fine Cacao - Coffee Nibs

One of the most bitter of the Republica del Cacao collection. As someone who is not a coffee fan, I really like how the chocolate taste surrounds the coffee bits. Despite the beautiful turtle on the cover, this is not my favorite. It’s all about taste! I still highly recommend it to coffee lovers - you can still feel the finesse and uniqueness of this chocolate bar!

Republica del Cacao - Duel de chocolat: Manabi vs Ecuador - 75% Fine Cacao

This article has a special format, where I will compare two 75% chocolates from Republica del Cacao. On the already known side, it is the Provincia Manabi - 75% Fine Cacao. On the new side, it’s the Single Origin Ecuador 75% Dark Chocolate, a chocolate that doesn’t come from a particular province, and probably the one used when combined with flavors like Quinoa, Red Pepper or Lemon Grass (see below). The rules of the game: two pieces per chocolate. We start with one at random, and alternate. In the end, there is no winner, except the taster!

Republica del Cacao - Single Origin – 40% Fine Cacao - Milk chocolate

I have always loved milk chocolate. As a child, and even as an adult before I knew about cocoa arriba, I did not like dark chocolate. But for the last few years, I’ve had more trouble: I can’t find the subtlety of the cocoa in it, which seems to be hidden by the sweetness of the milk. This chocolate from Republica del Cacao is a very good milk chocolate: soft, smooth and comforting. But it does not particularly stand out from other good milk chocolates.
